The French Toast & Bacon cupcake

I know that for many bacon is so last year, but for me, bacon is not a passing fling… I am in a lifelong relationship and love to taste its porky rich flavors in new ways.  Granted I have sampled some duds like the BK bacon sundae… Plain pieces of fast food bacon stuck in soft serve ice cream is ill fated from the get go. But then I encounter genius where the rich salty fatty flavors blends and transforms something rather plain into spectacular.  Meet my new favorite cupcake, it is the French Toast and Bacon Cupcake from the Cupcake Shoppe in Hayward.

The texture is soft and spongy, more like a muffin than a cake but fluffy and fabulous, infused with the flavors of fragrant cinnamon and maple. The swirls of cinnamon buttercream frosting are not cloyingly sweet and generously topped with candied bacon.  An altogether satisfying snack.  The store is at the back of a strip-mall that is off the beaten track, but I was armed with my GPS and drove slowly around the perimeter until I spied the sign.  It’s near Kenkoy’s Grill, a filipino restaurant that’s been on my list to check out, so now I know where that is.  I had a 50% off coupon where I paid $7.50 for $15 worth of jumbo cupcakes.  They only had three of the bacon cupcakes, so I chose a strawberry and caramel apple cupcake, which were completely overshadowed by the magnificence of the french toast bacon…

The handpainted signs are colorful and eye catching.  The attendant told me that they mostly only make jumbo cupcakes but can make smaller ones by special order.  I would think about doing that as the jumbo size was a whole lotta cupcake…

They also make cakepops and have a menu that changes daily that appears to be limited to what’s in the case.

The first time I went there, they had closed early because they were serving their cupcakes at the daytime Emmy awards.  My friend went on Sunday around 4 and they were already closed because they had sold out, so you might want to call before showing up.

Oh, those cupcakes look dangerously addictive! I love bacon in sweet treats.

i firmly believe that you can scatter bacon on top of anything and people will line up to buy it. 🙂

I’m a lifetime member of the Bacon Club as well. This cupcake looks OUTSTANDING!
