		<description>I spent two days with Tony in his Home Chef Pizza course and had dinner there.  He, the course and the restaurant are all awesome.  The pizza is perfection.  He is so passionate and serious about creating the best pizza possible.  We spent hours discussing Italian flours, cheeses, oils, yeasts, and salts.  Even the composition of the water is not overlooked.  Would you believe he takes a can of the most expensive San Marzano tomatoes and throws away 60% of the contents of the can because it is the brine, seeds, skin, core and other undesirable elements?  You will not find a more authentic high quality pizza this side of Naples.</description>
